Keto Breakfast: Popeye Sous Vide Egg Bites

Keeping keto on the go isn't always the easiest task. If you're not ordering food, making everything can be quite time consuming, especially if you're making different food for the fam. That's why we're loving Kelly's quick and easy Popeye Souve Egg Bites. These have less than 1 grams net carbs per bite, and are a great way to take breakfast with you on the go! 

Popeye Sous Vide Egg Bites

Ingredients 

  • 7 eggs
  • 3/4 cup spinach
  • 1/2 cup heavy cream 
  • 1/2 cup crumbled feta cheese
  • 1/2 cup crumbled bacon (cooked to your liking) 
  • Salt & pepper to taste

Method

Makes 9 Sous Vide Egg Bites

In blender mix 7 eggs with 3/4 cup of spinach and 1/2 heavy cream
Add salt and pepper to your liking 
Blend at least 1 minute to allow air into mixture
Pour halfway into silicon muffin cups 
Add half your bacon and crumbled feta cheese on top 
Pour rest of egg mixture to fill the muffin cups and top with more feta!
Bake at 350 for 30 minutes in a water bath-this is key (put muffin tin into a larger pan filled with boiling water)
